Hi there - lucky you! If I were you I’d be trying to sneak my way into the menswear or couture shows! I actually didn’t shop very much in Paris (too poor) but did go to COS and a few chain stores, some of those vintage stores in Le Marais you probably have already seen and Tuilleries. I would suggest a visit to Colette just for the experience. Same with Merci and what about Kitsune and APC?
